Crock Pot Corned Beef and Home Made Irish Soda Bread


I made this for Kevin, my parents and the girls tonight. I of course did not eat any of the meat but I did eat the veggies out of it and the bread! They all said it turned out really good!

Corned Beef


Ingredients:
1 Package Corned Beef with seasoning packet
Mini potatoes a dozen or so
Hand Full of Baby carrots
Cabbage I used a mini one cut up.
1 cup of water


Put Veggies into Crock pot, put Beef on top. Sprinkle seasoning packet & Add 1 cup of water. Cook on low heat for 10 hours.

Irish Soda Bread
4 cups all purpose flour
1 Cup Sugar
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cold butter
1 cup raisins (I used dried cherries instead)
1 & 3/4 cups 1% buttermilk


In large bowl combine all ingredients except buttermilk and raisins until mixure resembles crumbs. Add the raisens. Stir in buttermilk just until moistened. Turn onto lightly floured surface, gently knead 6-8 times.
Place on ungreased baking sheet; pat into 7in round loaf. Using sharp knife, cut 1-in cross 1/4 in. deep on top of loaf. Bake at 375 for 40-45 minutes until golden brown.
