Birthday cakes I made

Gabby asked for a Strawberry Shortcake cake for her birthday. The only place I found that makes them around here is Wegmans and I didn't like it at all. It was just a picture of Strawberry shortcake on top and $20.00 for a 1/4 sheet. So I decided I would try making her a cake from Scratch. I have never decorated a cake before so I made a practice cake first out of a cake mix in a box and frosting you buy in a can. I think it turned out pretty cute. Then I made her "real" cake from Scratch and decorated that one with home made Cream Cheese frosting. So after buying the doll for the top, the cake mix, cake flour ect.  I probably spent $20.00 anyway but at least she gets a doll to keep. We are going to Josh and Shelly's house for dinner tonight so we are going to eat the Strawberry shortcake cake at their house.

Gabrielle 4 Years Old

I will never forget the day I became a mom. There is something magical  about holding your first born child for the very first time. Gabby was born on March 24th 2007 at 8:36 A.M. She was 7 pounds 14 ounces and 19 1/2 inches. It is hard to believe how fast 4 years can go by. She still has pretty much the same personality she always had except she is a little bit  more of a drama Queen at times now.

She loves being a big sister. She is good at singing to Nathan to quiet him down when he is fussy. Gabby plays pretty well with Avalynn. They do argue and fight but they are also best friends. Her other best friends are her cousin's Natalee and Paighten.

Gabby's favorite things to play with are Star Wars Legos, My little Ponys, Barbies, Baby Dolls and her play food. She loves music and loves to dance.  Her favorite cartoons are Star Wars clone wars that she likes to watch with her daddy. She also likes Diego and Strawberry Shortcake. Her favorite Movies are Tinkerbell and the Great Fairy Rescue and Tinkerbell and the lost treasure, Snow white, Sleeping Beauty, Rapunzel, Sinbad and she says her Favorite Favorite movie is Milo and Otis. 

Gabby's favorite foods are "Juicy" Steak, Broccoli and Pudgies Pizza. Her favorite Snacks are Fruit Snacks and Granola bars. She also Loves any kind of Fruit and most Veggies.

Gabby hates wearing Jeans and calls them "Tight pants". She likes to either wear "Comfy" pants or Dresses. She wears size 4 or 5 now. She currently weighs 40 pounds (82%) and is 41 1/2 inches tall (83%).

Cheddar Broccoli Bake

Made this for Dinner tonight. It was good on such a cold snowy day!


1 (10.75 ounce) can Campbell'sCondensed Cheddar Cheese Soup
1/2 cup milk
ground black pepper
4 cups cooked broccoli cuts
1 1/3 cups French fried onions
Stir the soup, milk, black pepper, broccoli and 2/3 cup onions in a 1 1/2-quart casserole.
Bake at 350 degrees F for 25 minutes or until the mixture is hot and bubbling. Stir.
Top with the remaining onions. Bake for 5 minutes or until the onions are golden.

Beautiful Day

Can't get enough of this warmer weather. I actually got a little bit of a sunburn on my face today. Going to take the kids and go visit my gramma with my Mom tomorrow. Hope you all have a great weekend!

Crock Pot Corned Beef and Home Made Irish Soda Bread


I made this for Kevin, my parents and the girls tonight. I of course did not eat any of the meat but I did eat the veggies out of it and the bread! They all said it turned out really good!

Corned Beef


Ingredients:
1 Package Corned Beef with seasoning packet
Mini potatoes a dozen or so
Hand Full of Baby carrots
Cabbage I used a mini one cut up.
1 cup of water


Put Veggies into Crock pot, put Beef on top. Sprinkle seasoning packet & Add 1 cup of water. Cook on low heat for 10 hours.

Irish Soda Bread
4 cups all purpose flour
1 Cup Sugar
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cold butter
1 cup raisins (I used dried cherries instead)
1 & 3/4 cups 1% buttermilk


In large bowl combine all ingredients except buttermilk and raisins until mixure resembles crumbs. Add the raisens. Stir in buttermilk just until moistened. Turn onto lightly floured surface, gently knead 6-8 times.
Place on ungreased baking sheet; pat into 7in round loaf. Using sharp knife, cut 1-in cross 1/4 in. deep on top of loaf. Bake at 375 for 40-45 minutes until golden brown.
