Crispy Baked Chicken

1/4 Cup Flour or Bisquick
4 oz French's French Fried Onions
3-4 Boneless, skinless Chicken Breasts (You can also use Thighs)
1 Cup Ranch Dressing
1/4 cup Chicken Wing sauce (Optional)


Crush Fried Onions in a large bowl or large freezer bag. Mix Ranch dressing and chicken wing sauce in another bowl. Cut chicken into strips, dip into Flour, then dip into ranch dressing and then into Fried Onions. Place on baking pan. Bake 15 minutes at 375 then turn chicken and bake another 15 minutes.

Easy Cheesy Crock Pot Chicken

 

Ingredients:

  • 6 boneless chicken breast halves, without skin
  • salt and pepper, to taste
  • garlic powder, to taste
  • 2 cans condensed cream of chicken soup
  • 1 can condensed cheddar cheese soup

Preparation:

Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour over chicken in a Crock Pot. Cook on low 6 to 8 hours. Serve over rice or noodles.
Serves 6.

We are Buying a house

We have been living in a TINY 2 bedroom apartment for almost 3 years. With 3 kids and 1 on the way there is no way we can stay here any longer. We started looking at houses in January. Most of the houses in our price range were not in an area that we wanted to live. At first it was really depressing. We did look at one house that had a huge yard and the house was really cute. But the house itself way just way too small.

 In March we finally found a house that was in the right area and roomy enough for our family. The only downside is that the yard is small. On March 14th we put an offer in on a house. On the 16th we heard back that the seller counter offered at full price plus she would pay 3% in closing. At that point I pretty much figured we would not be getting the house. She hadn't even come down at all. we didn't want to pay full price because we did not feel the house was worth it and it needs work such as painting the outside and the roof is 20 years old so that will need replaced within the next 10 years. It also needs all new replacement windows. So our agent told us to come up with our best and final offer and we would submit that and have to be prepared to walk away if she did not accept. So on the 18th we put in our best offer.

We went out of town on March 19th and while we were still there on the 20th our agent called and told us our offer had been accepted. The only stipulation was that if something came up in the inspection the seller would not be able to pay any repairs. We said okay and moved on from there. We went to the bank on March 29th to sign the loan papers. We got a SONYMA loan with low interest and the government gives us $3,000 toward closing as long as we live there for 10 years we won't have to pay that back.

We have had the inspection and the owner did agree to fix a few minor things we asked her to fix. One was a leak on the roof over the sun porch, another thing was there was a smell of fuel oil coming from the tank and she had that looked at and fixed a seal, the other thing was that the Heating vents were full of cat hair so she agreed to have those professionally cleaned and all of that has been done. 

Now we are just waiting and hoping everything else goes well. The closing is set for May 29th but the bank said the closing usually does not happen on the set date so it could be longer then that. I hope not!! I am so excited and can't wait to move.

16 week prenatal appointment

I had my 16 week check up today. I have gained 10 pounds so far, my blood pressure was great and the doctor said that so far my blood sugars look really good. I hope I won't get gestational diabetes like I did with Nathan. I have been trying to eat low carb foods. The baby's heart rate was 157 and I am measuring right where I should be. My Ultrasound is scheduled for April 27th, can't wait to see the baby again and hopefully find out the gender.

Easter Egg Hunt #1


Yesterday we took the kids to Kevin's work Easter Egg hunt. They split the kids up by age and they all just dive into these piles of shredded paper that have empty eggs hidden and collect as many as they can. Then they draw numbers and if the number is on your egg you win a prize. None of our kids won a prize but they all got a tiny stuffed animal and candy at the end. I think the kids all had fun.

Mexican Lasagna

I found this recipe on a Forum I am a member of. We had it tonight and it was so good! Gabby loved it too but Avalynn wouldn't try it. I made a vegetarian Version of it for myself too.

Flour Tortilla's
Taco Meat..However your family likes it
Salsa/Picante Sauce
Mexican Blend Cheeses
Refried Beans. You can use Black Beans too.
Corn..Optional
Black Olives..Optional


Make your Taco Meat. Layer of Salsa on the bottom, Tortillas, Meat, Beans, cheese, etc. Keep layering for last layer just use tortilla, beans , and then towards the last bit of cooking top with cheese.


Warm beans for easier spreading. You can add or take away any items. Top with Sour Cream, Guacamole, whatever your family likes.


Cook on low for 4 hours
